really tasty stuff here, i love honey in a dark beer, and this stout shows wonderful synergy between dark roasty bitter grain and sweet floral honey, the honey is not lost to the roast at all but instead seems enhanced by it, they also put some vanilla in here, but its not over the top and to me this is sweet yeah, but it has wider appeal than the dessert beer space i think, its a great stout at its core, and that counts for a lot, strong but somehow not really hot on the palate even at temperature. there are nice layers of malt complexity here from dark chocolate to hazelnut, tobacco, smoke, raisin, fig, and toffee, some bitterness from the roast casting a coffee note through it too, and its not overly sugary even with the honey being as forward as it is, sticky and drippy and and little bit floral, waxy, and lingering on the palate as long as any other element. the vanilla enhances the honey without taking over, fudge and molasses ring loud, and there is an almost woodiness to this even without being oak aged, although they do some barrel aged versions i would really love to try. this is a palate coating brew with a ton of body, but it kinds of needs to be to be true to the honey, and it is. smooth and long, sweet but all in service of the honey, and just really good overall. one of my favorite beers i had during our two visits to this awesome brewery while we were in town! not to be missed.
