A limited barrel release of our imperial stout. We brew this version with Madagascar vanilla beans and a ridiculous amount of honey, then age it on unfinished oak and grilled cocoa nibs. The result is a combination of sweet vanilla and rich honey balanced against bittersweet dark chocolate. These flavors combine with the soft, velvety mouthfeel to mimic the sensation of eating a freshly baked chocolate chip cookie.

Truth in advertising here, tastes like someone dropped nestle chocolate chips in my beer. Almost like a vanilla chocolate chip cookie. Tons of cocoa nibs, then vanilla, and some bitter hops. The roasted flavor takes a back seat but is detectable with thoughtful consideration. Mildly sweet, but not overly sweet. Well carbonated but moderately thin mouthfeel. Very dark brown color with brown highlights and beige foam that settles into a thin rim around the glass and a couple small islands of foam. If you’re in the mood for a pastry stout give it a try. Depending on preferences I imagine you’ll find it at least serviceable and possibly fantastic.
