a super interesting sour beer here, with peaches or apricots, its hard to tell which, and some mint, lacto soured like a berliner, but kind of heavy, not all the way cleaned up or too well refined, but the flavors of the fruit and the mint together with the constructed acidity is great, and this recipe has a lot of promise. its cloudy and nearly still from the tap after a second, glowing pale orange with an almost juiced and pulpy look to it, soft in hue like the flesh of a peach itself, and with a cool sweetness to the nose thats even in front of the acidity. the lacto souring is a little raw here, and this has a little electric zizzle to it as well as a light cheese element, both kind of sloppy, but the actual acidity is about right to match up with the fruit, which could be either peach or apricot or both, juicy and ripe and delicious. the mint is the wild card here, botanical and fresh like menthol in the taste, lighter than that in the aroma, but giving this a sort of southern cocktail vibe, which is cool, makes me think this could go well in a bourbon barrel. overall a really neat and creative beer, one of the most ambitious we had here at zilker, and with a little cleaning up, it could be downright awesome...
