Brewed the same day and using the same mash as our Belgian Tripel, our Singel was created using the parti-gyle method, a traditional method where the weaker wort from a stronger beer is collected and turned into it's own beer. For our version, we added a healthy dose of Huell Melon to the whirlpool to provide a sweet honeydew melon character.

Poured from a growler into a pint glass
Appearance – the beer pours a clear golden straw color with a one finger head of white foam. The head fades rather quickly, leaving a light level of foamy lace on the sides of the glass.
Smell – The aroma is rather sweet with aromas of melon, orange and banana, along with smells of yeast and bread. Along with these smells comes a good deal of coriander and clove, along with notes of bubblegum and pepper. There is a good showing of a herbal and floral hop as well. A bit of lemongrass and grain round it all out, producing a rather nice aroma overall.
Taste – The taste begins with a bready and cracker malt base paired with a good deal of coriander and clove spice. Ther is a lighter sweetness with flavors of white grape, orange, melon, and pear. A modest showing of hop is present, being strongest of a herbal nature, but having some earthy and floral notes as well. Other yeast flavors and a bit of lemongrass are mixed in as well, both of which get stronger as the flavor profile moves forward. At the same time, a bit more a maltiness joins in, and along with some white pepper and a touch of apricot, one is left with an easy natured flavor to linger on the tongue.
Mouthfeel – The body of the brew is light and crisp with a moderate carbonation level. Pretty good for the style and the flavors and makes for an easy sipper.
Overall – A rather decent lighter in nature Belgium.
