From notes taken 06/23/16:
Served in chalice/flute. Semi-clear, deep, dark copper capped by two to three fingers of well-retaining, light brown fluff. Toast, berries, plums, touch of alcohol on the nose. Toffee, fermenting berries, a little coffee, a little cocoa. After about a half hour, licorice notes to the fore. Too fruity-sweet for me when first opened, missing something in the balance (including anything like anise or licorice) compared to high-grade Doppelbocks. But still not bad. Full-bodied, syrupy, and cloying in taste and feel. Carbonation spritzy and effervescent at first, mellowing to velvet.

Appearance - Pours a cloudy, auburn-tinged brown with a khaki colored finger width head. Fair retention leads to a thin, broken layer of surface suds and a decent ring around the edge. Small spots of lace with fair stick.
Smell - Sweet aroma with hints of caramel, raisin and a faint astringency.
Taste - Starts with lightly toasted bready malt, touches of caramel and a hint of raisin. Hops come in toward the back end with leafy, earthy flavor.
Mouthfeel - Medium-bodied with moderate carbonation. Smooth and drinkable with a semi-dry finish.
Overall - Decent flavor, but pretty weak by doppelbock standards. Nothing I'd look to buy. Onto the next!

Taste - Starts with lightly toasted bready malt, touches of caramel and a hint of raisin. Hops come in toward the back end with leafy, earthy flavor.
Mouthfeel - Medium-bodied with moderate carbonation. Smooth and drinkable with a semi-dry finish.
Overall - Decent flavor, but pretty weak by doppelbock standards. Nothing I'd look to buy. Onto the next!

Poured from 12 oz bottle into nonic glass.
Appearance: pours a 2" cream colored head which recedes slowly. Plenty of lacing. Color is a reddish-brown with streaming carbonation and sediment in suspension.
Aroma: rich roasted barley malt, cocoa, a bit of coffee, and some herbal hops.
Mouthfeel: light to medium bodied somewhat sticky mouthfeel with a dry, somewhat astringent finish.
Flavor: rich caramel, chocolate, some coffee, hops are not powerful, but they linger in the finish. There is also alcohol that warms the finish and the throat.
Overall: a well done and tasty doppelbock.

Poured from bottle into a pint glass
Appearance – The beer pours a chestnut brown color with a two finger of foamy tan colored head. The head has a decent level of retention, slowly fading over time to leave a nice level of lace on the sides of the glass.
Smell – The aroma is strongest of a roasted malt smell mixed with a light caramel sweetness. Along with these aromas is a rather nutty smell as well as rather decent showing of graininess.
Taste – The taste begins some sweeter caramel as well as a rather decent level of a roasted malt taste. Some other sweeter flavors come onto the scene as the flavor advances, with some apple and molasses joining the taste. This combination of flavors is rather odd overall with it getting even more unique as the taste advances to the end due to some other favors joining in. The flavors that join in at the end consist of some nutty flavors, a coffee flavor, as well as a lighter herbal hop flavor, which when combine with the rest, leave a rather oddly formulated but in some ways somewhat enjoyable sweet, roasty and bitter flavor to linger on the tongue.
Mouthfeel – The body of the beer is on the averages to slightly thicker side in terms of thickness and creaminess with a carbonation level that is average. The slightly thicker body is very nice for the nutty, roasted, and sweeter caramel flavors of the brew all while the average carbonation does well to keep it very drinkable
Overall –Initially I wasn’t really enjoying the beer too much, but after drinking more of it I grew on me. Maybe it was the warming of the beer over time, or just an appreciation of the mix of flavors. Regardless of what it was, and while not the greatest dopelbock out there, it is worth a try
