The original idea for this quirky beer came when our owner Paul and Evil Twin's Jeppe added Champagne to a slushie machine full of sour beer at a festival. To recreate that, we blend a grape juice-infused Brut IPA fermented using Champagne yeast with a fruited sour. This edition is one in a series based on Champagne cocktails, so peach has been used to replicate a Bellini.

Pours a deep amber, coppery coloration with a small, fizzy head. Smell is dominated by tart white grape and sweet peach, with just a hint of lime peel. Taste follows the nose, with slightly tart grape must standing out the most, as well as a good dose of sweet, juicy peaches and some lighter notes of lime peel acidity. Finishes quite dry, with a medium tartness and acidity, as well as some grape must and lime peel lingering in the aftertaste. Luscious, almost creamy mouthfeel with a medium body and carbonation.
I can't say I've ever had a Bellini, but this homage to it works quite well, with quite a dry character and good balance of slightly sweet and sour notes, as well as distinct grape must, peach and lime peel notes.

Pours looking like peach juice with a little bit of soapy head.
Smell is peachy with notes of white wine, grapes and canned peaches.
Taste is mildly tart and a little bit sweet with a lot of peaches and some white wine along with a bit of fruity acidity. Very cocktaily.
Mouthfeel is medium, dry, almost a little coarse, like peach skin, well carbonated.
Overall, an interesting beer cocktail.
