Brewed with our friends De Garde from Tillamook, Oregon, this complex fruit sour was fermented with a mixed-culture wine yeast before secondary fermentation in foudre with De Garde’s house culture. It was then aged in French white wine barrels on fresh blueberries, providing layers of berry, vinous notes and farmhouse flavours.
Aroma & Flavour: Tart cherry and redcurrant, light blueberry sweetness,
leather and farmhouse notes
Body: Light with a dry, tannic finish, prickling carbonation
Aftertaste: Red apple, tannic red wine flavours, lingering farmhouse accents

Pours a dark purple with very little head.
Smell is musty and rustic, tart and earthy with tons of fresh ripe blueberries and some funk and oak.
Taste is rich, pungent and earthy with plenty of tartness. Wave after wave of ripe blueberries crash against the tastebuds and the wake brings notes of dry white wine, citrus and funky oak. Great depth and complexity.
Mouthfeel is medium, dry and well carbonated.
Overall, a terrific, complex sour.
