Brewed in collaboration with Track Brewing Company.
Since our good mates from Track are currently sharing our tap room space at Unit 9, we felt it was only right to brew a collaboration with our housemates. This is a true indulgence for the festive period, a deliciously deep and smooth Imperial Stout, loaded with additions of cacao, hazelnut and vanilla, with a touch of fenugreek used for maple-like sweetness.

Pours black with pale head that gradually dissipates. Nose is roasted malt and dark chocolate. Not overly sweet - chocolate flavors with some nuttiness and subtle vanilla. Well balanced with a smooth mouth feel and moderate to full body. Minimal alcohol burn. A very good stout!

Pours a dark, Coca Cola-like brown with thick, chocolate colored head.
Smell is roasty and powerful, with notes of coffee, chocolate, licorice fudge and some sweet vanilla. Slight nuttiness as well.
Taste is sweet with plenty of roastiness. Notes of chocolate, fudge, vanilla, maple syrup and nuts. Strong and intense, but controlled, with no booziness and a bit of bitterness. Dangerously easy to drink.
Mouthfeel is medium and smooth with soft carbonation.
Overall, a terrific stout, with great balance. With a bit more body this would be superb.

Pours a pitch-black coloration with a large, creamy, mocha-colored head. Smells of roasted, caramel malt, with a strong fenugreek note, as well as chocolate, hazelnut and lighter notes of coffee and licorice. Taste is a good balance of roasted caramel malt, a strong, bittersweet fenugreek presence, coffee and some milk chocolate, lighter hazelnut, vanilla, licorice and just a hint of herbal hops. Finishes bittersweet, with a medium bitterness and some fenugreek, coffee and hazelnut lingering in the aftertaste. Smooth mouthfeel with a rich body and medium carbonation.
Fenugreek is quite an interesting plant that I've worked with in baking before. It has quite an intense aroma and needs to be used carefully, which they definitely pulled off because even though it comes through quite strongly here, lending both sweet and bitter maple and aniseed accents to this, it never feels overpowering and actually harmonizes quite well with the coffee and licorice notes, bringing to mind spiced coffee, while being balanced by sweeter milk chocolate and hazelnut liqueur. This definitely has a rather unique, complex flavor profile to it, largely because of the fenugreek, but there are lots of little nuances to it that all work together quite well, with a great harmony of sweet and bitter notes. Looks absolutely gorgeous, with a luscious, thick and creamy head, but is just a tad lacking in mouthfeel, unfortunately.
