An exquisitely poised and elegant dessert stout.

Sometimes you have to take a step back to take another forwards. This is a reimagination of our popular Imperial Stout, Persistence Is Utile, with a touch of smooth elegance from time spent in oak. The process began by stripping the original back to the basics and letting the base beer, before additions, sit in Speyside whisky barrels for three months.

What emerged was remarkably rich and sleek, so we added further complexity by conditioning the beer on vanilla beans and heady, full-flavoured single-origin Peruvian beans from Workshop Coffee. Enjoy, it alongside your favourite dessert, or grab two glasses and savour some time with a loved one.

Pours a pitch-black coloration with a medium, frothy, quickly fading head. Smells of roasted, caramel malt, chocolate and a distinct coffee presence, as well as just a hint of vanilla and subtle barrel notes of Scotch and charred oak. Taste is an excellent balance of roasted, caramel malt and rather distinct notes of roasted black coffee, with spicy cinnamon and cardamon accents, dark, bitter chocolate and lighter dark fruit: fig, raisin and vanilla notes, as well as a rather subtle barrel presence of charred oak and Scotch, with the merest hint of peat coming through. Finishes bittersweet, with a light bitterness and some coffee, vanilla and charred oak lingering in the aftertaste. Velvety mouthfeel with a medium/rich body and low/medium carbonation.

This really shows off that Cloudwater does barrel-aged Stouts just as well as IPAs, although they once again kinda put their own, unique spin on it with a rather subtle barrel presence and mellow overall balance, while still featuring some rich coffee and lighter chocolate, vanilla and dark fruit notes. I'll be honest, I was a little disappointed with this at first, but it really comes together wonderfully as it warms, with the barrel presence coming out a little more and one really appreciating the sublime balance of sweet and roasted/bitter notes here. One of the few times that I really wish this came in a 750ml rather than a 375ml bottle when it comes to 10% Imperial Stouts.
