Capturing the subtle complexity, juiciness and easy drinkability of a low-intervention table cider, this Pale Ale was fermented in red wine barrels with a wild apple culture. Conditioned in bottle for 18 months.

Pours a cloudy, deep golden amber coloration with a small, fizzy head. Smells of wheaty, slightly grainy malt and estery fruit, with notes of tart green apple, apricot and gooseberry, as well as subtle hints of musty oak. Taste follows the nose, with an excellent balance of wheaty, slightly grainy malt and estery fruit, with bright and juicy notes of tart green apple, apricot and gooseberry, as well as some musty, very sligtly tannic oak and perhaps just a hint of mild funkiness also coming through. Finishes with a light/medium tartness and some grainy malt, tart green apple, gooseberry and musty oak lingering in the aftertaste. Smooth mouthfeel with a medium body and carbonation.
While I'm not really a big cider drinker at all, I think this makes for a very interesting beer/cider hybrid that is reminiscent of a young, hoppy Saison, although most of the fruity character feels more estery than hoppy here. While that tart green apple presence is probably most noticeable, there is quite a decent malt body to this as well, which adds a certain depth of character along with the subtle, musty accents of oaky tannins and mild funk. Overall, this makes for a very interesting and enjoyable hybrid brew that is easy-drinking and refreshing while also offering a certain complexity at the same time.
