one of the weirder beers in our epic little bottle popping session. the clear glass a strange choice for something intentionally this hoppy, perhaps the brett and the light meant to make this thing pop off, and it certainly does. some serious gunky sediment stuck to the sides of the bottle that had been stored vertically, up near the neck, looks like this underwent some serious bottle refermentation. it gushes like mad when we open it, eager to escape the bottle, and its super airy and fizzy and active, hard to control the pour, hazy but very light looking straw colored beer underneath all the wispy foam. my buddies both dislike it it pretty much right away, the hops are really intense, southern hemisphere fruitiness and white wine character fill the room, a mix of a lot of things with all this funk too, its intriguing more than repulsing to me, but i am in the minority here, the brett is farmy and loaded with wet animal weirdness and stink, either overpitched or overdeveloped by most standards i reckon, but to me its cool, especially in the absence of any real bacterial acidity, its just slightly tangy, which makes the hops pop, i actually think the ferment on this is super appealing, but i like it weird. the hops are intense as can be, overdone by most standards, but these varietals play awesome together, drippy melon, raw coconut, new school sativa, and tangerine. neat how the sabro works with the others, havent really seen that yet, especially in a beer with a funky fruity brett profile like this, some new synergies are promising and intriguing here. its juicy like no other, and there is some hop bitterness late, but no greenness at all for how saturated it is, makes me think cryo, or something chemical with the brett to allow for greater uptake without harshness, cool either way. neat oak richness to it too, still light overall, but the wood extends it and grounds it. i dont think this is terribly well refined, but not in the clunky chunky gross or wrongly textured way that i usually associate with the term, it just seems sort of fully experimental, like they didnt quite know what this would do, not yet fine tuned, like its not objectively great by conventional quality standards, but it tought me something and i really am sort of fascinated by it, i love the brett profile and with these hops so bold its very cool overall, but that said, i also see why the boys were quick to move past it. overall though really cool brew, something id love to try other variants of, i didnt really know these guys did this sort of thing. wildly interesting, super fun!
