Our brewer Jimmy has spent many nights cruising the bars and taprooms of Japan, a place where he finds inspiration in their passion, hospitality and dedication to quality beer. This meant that it only made sense that when Eugene from Totopia Brewery in Nagoya, Japan was over earlier this summer for These Hills festival, we quickly bundled him into a van drove up to Manchester to put together a big juicy DDH IPA absolutely brimming with bucketfuls of hops, something both our breweries, and plenty of you love.
We’ve left no shortage of hops in this DDH IPA with a double dose of Chinook, Centennial, Enigma, Citra, Simcoe and Ariana, throwing in some extra Centennial in the boil and Chinook in the whirlpool for an extra layer of spice and peppery herbaceousness to balance notes of peach ring sweets, lime and white grape skin. A perfectly balanced bitterness that makes you want to go back for more. Kanpai, tomodachi!

Pours a hazy light orange with soft, fluffy head.
Smell is fruity and juicy with some sweet hints. Notes of mango, orange juice, grass, mango and peach candy.
Taste is fruity with a moderate bitterness and notes of apricot, mango, peach candy, grapefruit and gooseberries.
Mouthfeel is medium, soft, pillowy and well carbonated.
Overall, a terrific IPA, not as hoppy as I thought it would be.

Taste is fruity with a moderate bitterness and notes of apricot, mango, peach candy, grapefruit and gooseberries.
Mouthfeel is medium, soft, pillowy and well carbonated.
Overall, a terrific IPA, not as hoppy as I thought it would be.

L: Opaque, the colour of grapefruit juice with a short-lived head that reduces to a patchy cap and some spotty lacing.
S: White grape and lime.
T: Tropical fruit, green pepper with woody spice.
F: Medium body, soft & pillowy mouthfeel.
O: A super complex 7% hazy. Absolutely tonnes of hops. A sipper that’s dangerously easy-drinking.
