Aged for 1.5 years in a mixed-culture foudre before dry hopping at 24g/L of Sabro & Amarillo hops.
This powerful dry hopping rate was established as our house standard during the development of our DIPA programme back in 2016, and has since become an industry standard.
We’re thrilled that it yields exceptional results in mixed-culture beer too. A complex blend of funky and tropical citrus aromas give way to flavours of sweet pomelo, passion fruit, and a funky complexity derived from mixed-culture fermentation. A touch of tartness lightens the body and enhances drinkability.

375 ml bottle, as Cloudwater Funky IPA Sabro & Amarillo Dry-Hopped Foudre Ale Vintage 2023, at Cardinal, Stavanger. ABV is 6.8%. Slightly hazy golden colour, large white head. Aroma of farmhouse, farmhouse kitchen, brettanomyces, over-ripe and fermenting apples, oak and lactic acid. Medium sour flavour with the same elements. Unusual and interesting.
