Silk City - Cognac Barrel-Aged

2018 vintage. Served on draught at the brewery for the 2025 Silk City release. Draught pour into a wine glass. The color is something between dark walnut and ink black. The light mocha-colored head disappeared almost immediately leaving a small ring but no lacing. Cognac dominates the smell initially but as it warms there is also chocolate, leather, and tobacco smoke. You can tell this Stout is aged. The tastes are evident but somewhat muted. There is chocolate, caramel, cigar, and a tantalizing hint of dark fruit. the influence of the cognac barrel is noticeable but not as much in the taste as the nose. It nicely compliments the other flavors. It is quite soft and delicate. Like other Silk City variants, the mouth feel is not especially thick and creamy, and the 10.5% ABV is well-hidden. Overall, it is a real treat to drink this Silk City variant aged 7 years.
