Collaboration with Magnify Brewing. Our first collaboration AND pastry-style Silk City! For this new variant, we brewed up a lactose-infused version of our Bourbon Barrel-Aged Imperial Stout base and conditioned it on freshly toasted coconut, pounds of cake batter, and Papua New Guinea coffee from Roast'd. This variant exhibits aromas reminiscent of melted Hershey chocolate bars, hazelnut, cinnamon buns, and coconut cream followed by flavors of homemade crumb cake, decadent coconut macaroons, fresh vanilla bean, liquid tiramisu, and old fashioned chocolate fudge.

My first taste of this brewery squeaks out of a 500ML bottle with a greyish white wax, very thin. A little concerned about the rust that immediately shows upon popping the top.
The pours is black, borderline still, like my feelings on hearing any ZZ Top song. Nose? Sweet & bourbony. Shocking.
Silk City – Bourbon Barrel Coconut Coffee Cake hits the bullseye; like a whiskey tasting next to a wedding cake shop. The cake batter is evident; not normal. The barrel is evident; much more normal. Coconut slide into the mid-palate strongly, but the coffee is missing, & would be welcome to cut the cascade of sweetness. A little booze, a little Bagley soil, & perhaps a bit of very green coffee on the finish. Heavy, especially for the ‘light’ ABV. This is about the right amount to put into my body in one night.
A lovely little beer that’s just slightly off. The missing ingredient – coffee – would have vaulted this forward. Still, very nice.

Reviewed on the day after 2023 bottle release. Poured at 64° into a Silk City commemorative glass. It pours a dark walnut color - almost black - with a half finger of foamy medium-mocha head that dissipated rapidly. It has a big, Pastry Stout nose with cake batter, fresh coffee, vanilla, brown sugar, chocolate, coconut, macaroon, and a soft scent of bourbon. Hugely fragrant. There is a great deal of initial sweetness and it really does taste like coffee cake. But the sweetness is balanced by sour mash from the bourbon barrels and acidic coffee. The coconut and macaroon and also strong in the taste. As mentioned above you can taste the bourbon influence but it's quite delicate and doesn't distract from the other flavors. The mouth feel is luxuriously thick and chewy - you can feel the influence of Magnify. It has a motor oil consistency - in a good way. You could pour it over vanilla ice cream. Overall, if you don't like Pastry Stouts, then I'd pass on Coconut Coffee Cake. But if you like the style, then I predict you'll be impressed by how well the flavor simulates the desired coconut coffee cake. Very well done!
