Inspired by an iconic part of American dessert culture, Silk City (2024) BBA Banana Split is our rich, luscious, Imperial Stout base aged 6 months in hand-selected, freshly emptied, Bourbon Barrels from A. Smith Bowman Distillery and conditioned on Cocoa Nibs, Vanilla, and super flavorful Wild Thai Bananas.

Reviewed the day after 2024 bottle release. Poured into a commemorative Silk City stout glass at 58°. It pours a lovely, dark mahogany with a half finger cap of medium mocha-color foam and a thin sheen of lacing. A nice smell featuring bourbon, tobacco smoke, dark chocolate, freshly-brewed coffee, and subtle but noticeable ripe banana. I was concerned that the banana would be sweet and strong but it's not. The taste is largely akin to the base stout with lots of chocolate, acidic coffee, and fairly hot barrel notes. The banana influence is modest and comes through at the finish. In fact, were it not for the name I would barely notice it. This stout has a creamy, viscous mouth feel with low carbonation and it's surprisingly boozy for 10.5% ABV. Overall, I was prepared not to like Banana Split but Brix did a very good job in modulating the banana influence. This is fun to drink.
