We took our original Keep It Mello, brewed with marshmallow fluff, vanilla, oats and lactose and hopped with Galaxy and Motueka, and added graham crackers to the mash and cocoa nibs post fermentation.

I had this on draught at the brewery of release day. It pours an opaque, dirty honey color with almost a finger of bright white head and lacing. The head slowly dissipated leaving lots of lacing in the glass. The smell is just as advertised: vanilla and graham cracker; there is no fruit or hops. You can really taste the graham cracker, along with vanilla/lactose. It has a sweet, mellow (no pun intended) flavor. The Moetuka hops compliment the sweetness. It tastes better than I anticipated, particularly as the glass warms. It has a rich, creamy mouth feel with moderate carbonation, and it really hides its 8% ABV well. Overall, while I admit this is a gimmicky, adjunct-laden DIPA, I liked it. It's not a beer I would drink every day but it's an interesting, and fun, change of pace.
