Mashed at 151°F for fermentability and dry finish. Using a similar technique that we utilize in whiskey mashing, we used local, raw corn to do a “cereal mash.” This takes the place of using flaked corn or dextrose in the brew. This allows us to get the drier, lighter bodied beer we were looking for while using the same corn that is used in our bourbon whiskey. Low hop additions in the kettle and whirlpool for flavor and aroma to keep a balance with the light body.

Slightly sweet corn flavors upfront with a light, dry body and finish. Notes of mint and floral aromas and flavors for the light dry hop. Effervescent carbonation for a refreshingly light, summery mouth feel. Overall, a refreshing summery beer to be enjoyed cold on a hot afternoon.

Grain Bill: NY Pale Malt, 2 Row Barley Malt, NY Corn, Flaked Oats, Vienna Malt
Hops: Cascade during the boil for bittering. Jaryllo in the whirlpool for flavor and aroma.

Taster at brewery. Clear golden pour with a creamy white head, lacing. Grainy aroma and taste. Really close to a lager, except for the creamy feel. Tasty

This Cream Ale is slightly cloudy and golden straw (SRM 4-5). The one-half inch foamy white head holds for a couple of minutes before dissipating to a thin ring in a Roosterfish shaker pint glass.

The aroma is biscuity and grainy with noticeable DMS. This is a "beery" Cream Ale. Some caramel is released as it warms.

This is one of the more flavorful Cream Ales I have had. It is very grainy and sweetness is kept in check by light bitterness. Generally it follows the nose, however, the long, mild finish adds a bitter touch.

The medium to light body is crisp with a nylon texture and ample carbonation. Alcohol is conspicuously absent.

Cream Ales lend themselves well to after-work thirst slackers. This one will pair well with one's buddies while tailgating or after yard work.
