Mashed at 155°F for a dense mouth feel and semi-sweet finish. A dash of hops to control sweetness and highlight malt flavors.

Strong malt flavor, mild bitterness, deep brown color, medium head and medium-heavy mouth feel. Aromas of nuts and dark bread baking with a hint of coffee and dark fruit. Caramel and bready flavors dominate with slight hints of chocolate and dark fruit.

Grain Bill: NY Pale Malt, Malted Barley, Malted Wheat, Flaked Oats
Hops: NY Cascade and West Coast Cascade Brewing

This beer is dark brown (SRM 25-28) and clear. A slight rocky almond head immediately dissipates to a ring, leaving no lace on a PBGC tulip glass.

The aroma is filled with grain and light soapiness. There is a hidden sweetness and the beer lacks richness. Nuts provide a mild background, though possibly only a suggestion.

Brown Ale is well balanced with mild flavors. The nuts are more prominently represented in the flavor, however, they are still mild for the style. Roasted malt comes forward late in each sip. The finish lingers and is too strong and sweet with light astringency.

Light fizzy carbonation lifts the medium body. Alcohol is slightly greater than expected. Sweetness is mild and completely dries out in the finish.

Reviewed on its own merits, this is a fine entry beer. Reviewed against the potential of the style, much more can be achieved. Brown Ales in general tend to be uninspired, however, I think they are forgotten territory for adventure.

Regardless of the specifics of this particular beer, innovation of the brewery is spectacular. They have a unique waste water and spent grain program that produces zero waste and may be a harbinger of the future.
