Very dark brown, beautiful foam, not too much.
Smell: totally dubbel. Malts, dark candy sugar, fruit in alcohol, red fruits, some hint of dry fruit.
A bit more sweet in the taste, again candy sugar, but ok.
The body, however, it is really too thin, almost watery.
Short aftertaste, with even some fresh and balsamic note.
Westmalle - Rochefort collaboration, well done.

Chocolate, caramel, nuts, some spices. Somewhat thin, but creamy.

My rating may reflect more on expectation and bias than reality. When I saw the collaboration of brewers, naturally I was super impressed and excited. Aroma was wonderful, but taste was surprisingly average for a Dubbel, especially considering Rochford and Westmalle were involved, two of the kings of complexity. I thought I'd let it warm up a bit, but still found it somewhat smooth and tasteful, but without the mouthfeel, aftertaste and complexiity I was expecting. Makes me wonder how much influence each brewer (Monestary) has in collaborations such as this. Still a tasty brew, but perhaps I had gotten my hopes up unrealistically. Encourage all to find this and tell me I'm wrong.

Poured at fridge temp. Pours brown with tan head. The nose is amazing. Candy toffee, chocolate, tons of malts. figs, and prunes. A nice earthy note as well. Lovely. The taste reflects the nose, with a few departures. Picking up more molasses and black licorice on the taste, mingling nicely with the toffee and bready malts. Figs, dates, and some nice spice. Lovely. Mouthfeel is medium bodied. Good carbonation with a nice malty aftertaste.

Talking about a collaboration, the Trappist brewing beasts of Westmalle and Rochefort team up with Tre Fontane for a classic, authentic and spot-on Belgian Dubbel Ale that captures a flavors that only the monks can.
Limited in its production, Sinergia '21 pours with the prescribed rusty garnet with foggy hints of brown and ruby. A spicy tingle of the nose comes as the Dubbel rises into a dense blanket of tarnish foam. Complementary stone fruits, dried fruits and pitted fruits rise next along with hints of brown sugar and fresh pastry. Sweeter in its taste, the flavors pick up on those savory sugars with a steely caramel character with elements of sorghum and light molasses.
Sweetness faded rapidly on the middle palate to highlight a peppery spice that comes with impressions of cinnamon, fresh cracked peppercorn and a simmering spice of holiday character. Remnants of malt carry a toasty and nutty flavor through the centerpoint of taste and link up with a fruity taste that's redolent of cherry, date, fig and raisin before trending spicy and woodsy with gentle hop balance and a hint of red wine for extra measure.
Medium-full in body, the malt-centric approach to the Dubbel has the palate thinking fuller in character, but its dry and bubbly nature lightens the textures considerably. Its a very easy drinking malty beer that carry several nuanced complexities that's tough to explain and to qualify. Finishing malty-dry and with a medium length aftertow of spice and toast, this Dubbel is spot on.
