Ruby pours without producing any head. I would describe it as similar to soda. The beer is pale, brownish/orange, and almost clear. Large occasional bubbles of carbonation are, again, similar to soda. With no head, comes no lace, although there is a thin film forming on a Pretentious Beer Glass Company tulip glass.
The aroma is quite sour, with sweetness unsurprisingly very much like rhubarb pie. Unsurprisingly, because rhubarb was used in the brew. The wild character of the yeast is very present in that it is spicy and sharp with earthiness.
The flavor follows the nose with an addition of strawberry. The strawberries here are perhaps the cleanest I have ever tasted in a beer, or any other beverage for that matter. Just like rhubarb pie, the sweetness makes a nice contrast to the sharp tartness. Earthy yeast quickly bites in the finish and lingers, reminiscent of strawberry Starburst candies.
This beer has a light body and silky texture. The carbonation is ample and fizzy and there is no real sense of alcohol. Even though it is very sweet, it is still quite refreshing.
Ruby is a pleasant surprise on a late Summer day. It has lots of fruit to water the mouth on a hazy, hot and humid day. The name immediately reminded me of my Grandmother, and the beer lived up to that memory.
