Mossback Monk is a traditional brewed Belgian Tripel. Dominated by pale malt this golden beer can be quite deceiving: it is smooth and slightly sweet, with an effervescent finish, yet boasts almost 11% ABV. It has a variety of flavors from the unique Belgian yeast used to ferment it, ranging from ripe stone fruits (ex: plum, apricot) to bubble gum, to cotton candy, to a slight pepper finish.

Clear orangey amber brew without much foam in the Kasteel chalice. The inviting aroma is very spicy and fruity. Extremely sweet. Canned peaches and spice cake are the flavors. Hot with alcohol and very little carbonation.

This must be the strongest Tripel I've ever tasted. It's interesting for some sipping, but it's more of a liqueur than a beer. From the 22 oz bottle purchased at Central Market.

Poured into a Gulden Draak tulip. Pours a medium orange with a touch of bold, quarter finger white head that dissipates to patches and light lacing. Aroma of light stone fruit, apple juice, light citrus and clove, classic tripel. Flavor follows, with apricot, pear and apple and hints of orange and mild buttery background, starting semi-sweet and finishing a bit drier with some clove. Medium bodied with light creaminess and good carbonation. Hits all the characters of a traditional Belgian tripel with good fruit notes and light spicing. Authentic tasting, but a little on the hot side. Hellbent does a fine job over a range of styles and this one is another. A very nicely done domestic tripel and one I will visit again. Hopefully will be brewed more often; other than Fin du Monde, tripels are scarce on the market these days.

Tasted on tap at the Dog & Pony, Renton, WA.

L - Medium golden color; Murky/cloudy. Some white, fine-bubbled head that fades quickly.

S - Aroma strong on bubblegum, but has nothing else to offer.

T - Some light, grainy pilsner malt right up front. Quickly replaced by bubblegum, light clove and herbal hops.

F - Medium to heavy body. Sweet, mouth-coating finish. Low to medium hops bitterness. Strong alcohol presence.

O - A bit “hot” even for me, who likes Belgians that way. That, combined with the massive bubblegum makes me wonder if the fermentation temperature was a bit high. The appearance is also not very appealing. However, this is a decent US version of a classic Belgian style.

I had this beer on-tap in a tulip at the brewery.

Appearance: medium golden hue with a touch of haze and a thin layer of ivory foam. Not bad.

Smell: sweet, malty aroma with a decent Belgian character and a little bit of orchardy fruitiness. Decent enough.

Taste: malty with a fair dose of sweetness and quite a lot of alcohol heat. It's got some decent tripel character, but to me it's a little messy.

Mouthfeel: medium body with an OK carbonation and creaminess.

Overall: this beer has some good qualities, but it could be cleaned up a bit with a little less heat.
