We're laying down a funky beat. Four beats, to be precise. It's our Elements of Funk series, designed to showcase the similarities and differences between four strains of brettanomyces, which the cool kids call "brett". To accomplish this, we started with a base beer that took inspiration from Saison de Lente, using a fairly simple malt bill, noble hops and familiar house yeast to leave the path to funk as unobstructed as possible. Following the base beer's fermentation in stainless steel, we then sent one quarter of it to the brite tank at a time. Each quarter was inoculated and separately bottled with a different strain of brettanomyces: lambicus, drei, claussenii and brux. While all four variants appear similar to the naked eye, the nuances are many.
Elements of Funk: Brettanomyces Drei exhibits a fruitier aroma than other members of its funky family with citrus and tropical flavors flirting amidst a tingly, expansive and dry mouthfeel.

A: Poured into a Duvel tulip to a light golden orange beer that is heavily carbonated. The beer is topped by a massively dense and rocky four finger white head which fades slowly leaving excellent lacing
S: Smells of chalky yeast, tropical fruits and some citrus along with a dry malt backbone.
T: Taste is huge tropical fruits up front with some pineapple notes, nice citrus at times as well. Dry cracker like malt comes in toward the back with a slight spice and some slight grassy notes with just a hint of tartness. On the swallow this beer is more tropical fruit and citrus with a clean light cracker malt at the back end.
M: This beer is on the lighter side of things in body but it is not watery. Carbonation is quite lively and effervescent but the beer is not prickly while the beer has a drying finish from all the attenuation.
O: Overall this one is pretty interesting and my first of the series and I wasn't quite sure what to expect. Carbonation may be a little too high but we can deal with that. The flavors and complexity of this beer are nice. There's no funk and just a slight hint of tartness on this beer which isn't a bad thing. This one reminds me a lot of Mo Betta Bretta from Lost Abbey. This one is worth a try if you want to see what different yeast strains bring to the party.

While having a similar look as the Lambicus variant, this one was not as much of a gusher, with a large white foam leaving coral lace on the glass above a hazy orange body.
Aroma is more of a sweaty, spicy peach with notes of grapefruit and lemon rind.
This drinks a little easier than Lambicus too, featuring flavors of peach, apricot and a hint of bitter greens. The light body has a crisp, papery feel with a dry finish. Notes of pear and grapefruit accent this one, which is a touch more sour.

2015 vintage stored at 42 degrees and served at 45 degrees in a hand washed and dried Jester King snifter.
Aroma – leather and citrus.
Head – first pour large (Maximum eight cm, slow, controlled pour), off white, low density, average retention, diminishing to a three to four mm ring and a complete layer of varying thickness, with multiple drag marks and islands left behind as the head recedes. The foam continues to push slowly from the bottle neck and gently falls to one side. Second pour has a slightly smaller head and the bottle no longer foams over. With each subsequent pour, the head becomes slightly smaller.
Lacing – just the leftovers from the head recession.
Body – light yellow, murky.
Flavor – Very light and slightly citrus-fruity with a weak bitter aftertaste of grapefruit netting. Not at all unpleasant. Since the base is allegedly a blonde beer, I have to comment that there are no flavor notes of malt or hops, although the slight grapefruit bitterness may be attributable to either the hops or the Brettanomyces. Alcohol is absent, as is diacetyl.
Palate – light, dry, soft carbonation.
Overall, this is a very drinkable gateway beer for the neophyte to Brettanomyces secondary fermentation. If I ever find any, I’ll add it to my cellar.

A - Poured into a Kate the Great tulip a nice slightly hazy golden hue with a rocky head that fades to leave thick lacing.
S - Aromas of light funk, sweet grassy hopes, light lemons. Very mild.
T - Taste is similar to the nose, very light funk. Subtle grass notes, light sweetness. Really light lemons.
M - Mouthfeel is lightly carbonated, rather low.
O - Overall this is a very underwhelming beer. The brett is very lackluster.

Again erupts with foamy head that just takes over the glass, tons of lacing, murky golden orange color
Nose decent funk, little horse blanket funk but just a little, little fruity, grainy bready malt, grassy floral.
Taste brings a little funk but not much, fruity, little sticky sweet malt, toasted malt and candi, little floral grassy spicy hop with same for Brett, lemony note, maybe green apple. Finish dry bitter grassy floral hop and fruit skin.
Mouth is med to lighter bod, lots of carb
Overall not much funk, little fruit, over carbed again, eh.

750ml bottle that not only gushed but continued to purge itself into my sink for about 5 minutes. Once settled, the brew appears a hazy copper color with excessive off-white head.
This smells sonewhat tropical with an underlying feel of banana, clove, wheat and minerals/carbonic character with some citrus and orange rinds as it warms/breathes.
The taste is wheaty grains, clove and a bit herbal with footy phenolic plastic to rubber aspects that are not that great.
Light in body with way, way too much carbonation to the extent that it leaves a carbonic footprint in the beer that distracts. We drank all 4 versions side by side and while ai appreciated the chance to note the nuances of the brett strains, some were so subtle that we had a hard time differentiating them.

S - Funky, earthy and light belgian yeast and apples.
T - Funky, bready, belgian esters and mild tartness.
F - Light bodied, high carbonation and a dry finish. Crisp.
O - Super drinkable. After having Claussenii yesterday, I'm starting to wonder if the base beer the brett is in is too prominent for the brett to shine and really have that isolated flavor from the 4 different versions.
