The head starts large with big bubbles and quickly diminishes to no bubbles and, therefore, no lace at all. Light haze with a lemon yellow color.
Plenty of sourness to the nose. It's almost like spoiled lemons. No sweetness whatsoever.
The flavor matches the smell. It's a classic Berliner Weisse with plenty of carbonation and strong, lip-puckering sourness. Lots of carbonation with a lighter body, similar to soda pop. The sourness dominates from start to finish, even though the finish is moderate in length.

I enjoyed this with a meat and cheese plate. The beer is cloudy and mostly still...straw colored and no head. The aroma is tart, with lots of wheat...dry, but creamy. It cuts through my snacks exceptionally well. Refreshing, some undertones of fruit and grain. Loads of wheat. Drinkable and well made.

With the threat of sourness and the promise of wheat, the soft and acidic taste of Berlinerweiss manifests at The Brewery in their Terreux series. The lineage of flavors that traverse across the palate are bright, tangy and oddly soft.
Hottenroth pours a cloudy wheat appearance with a creamy sheet across the glass. Moderate lacing reveals a simple scent of lemon, apple, burlap and honeysuckle. Sourdough and sugar cookie align on the early palate while its grain influence charges in with hard lemon candy and fresh baking bread.
Buttery chardonnay, soft oak nuttiness and grilled lemons start the bulk of taste as the sour wheat ale begins to saturate the middle palate. Cracker-like and slightly doughy, the beer's malty underpinnings are short while the flavors soon favor a lemon, lime, apple and orange taste. Low in bitterness, the finish is brisk, crisp and tepidly savory.
Medium light in body and siding with a muted blandness, the beer's taste is of lemony seltzer water, high carbonic bite and a trail of buttered popcorn to close the taste in a fast and oily aftertaste.
