Sour ale aged in American oak barrels with Eis Sauvignon Blanc grapes. It’s madness. Quite literally. Imagine freezing Sauvignon Blanc grapes and then hand-pressing the juice out of them to extract the sweetest, most nectarous substance possible from the grapes for an experimental ale that masquerades as wine. We did, even though the eis method yields about a third of the juice compared to traditional pressing methods, as the water freezes and the sweet juice remains for extraction. The effort with the grapes from Roblar Winery in Santa Ynez was worth it though, giving us the amplified level of sweetness and Sauvignon grape character that we desired for our creation. We then added the pressed juice to a carefully selected blend of about 75% sour ale and 25% bourbon barrel-aged ale and allowed its character to evolve and mature in American oak barrels. It’s equal parts crazy and complex, exhibiting bright and nectarous notes with chilling sublimity.

A: Poured into a snifter to a golden orange beer which is slightly hazy. The beer is topped by a thin and slightly rocky finger of white head which fades very quickly to a collar around the edge of the glass with minimal lacing.
S: Smells of intense melons like honeydew with some grape aroma, a touch of wood, light tartness and a good bit of sweetness.
T: Taste is sweet with building sourness up front with a lemony pop along with some nice dry oak. On the swallow there's some melon sweetness, a bunch of grape flavor, more wood, and a hint of chalky funk.
M: This one feels to be on the heavier side of medium with a slightly syrupy feel on the palate. Carbonation is light, but it is there while the beer has a drying finish due to the acidity.
O: Overall I really dig this one but it doesn't really follow the nose. The nose is straight eiswein but the taste is so much more than that with some nice balance and complexity. Definitely worth a try if you like beer/wine hybrids.

Split with JLindros. 2017 vintage.
A - Poured into a Kate the Great tulip a nice crystal golden copper hue with a thin head that fades to leave light wisps.
S - Aromas of bright spritzy white grapes, big and bright, loads of oak. Loads of stone fruit as well. Very fragrant.
T - Taste is similar to the nose with enormous oak and tannins. The oak is incredibly oppressive. There are some buttery notes. The citrus is pleasant and tart, flashes of stone fruit, however, the harsh oak utterly ruins it.
M - Mouthfeel is lightly carbonated, crisp, alcohol hidden well.
O - Overall this was a very very underwhelming beer. The oak is just terribly overwhelming throughout, be it finish or start.

Appearance: Straw-yellow color with a modest sized white head that subsided fairly quickly.
Smell: Grape notes mixed with some barnyard funk along with some mild grassy/hay aromas.
Taste: The beer has some white wine notes and moderate tart citrus fruit notes. There are also some mild hay-like notes with some barnyard funk. The beer initially finishes somewhat sweet before ending dry and clean. As it warms beyond the recommended serving temperature some faint bourbon notes come through.
Mouth-feel: On the light side of medium-bodied with a modest level of carbonation.
Overall: An interesting wild ale featuring some unique flavors.

750ml bottle poured into a snifter

S- bold aroma of Sauvignon grapes up front, along with plenty of woody oak. Lime zest, hints of bourbon, caramel and acidic funk
T- huge flavors of concentrated Sauvignon grapes up front with a bold sweetness complimenting puckering sourness. Mid-palate brings out woody oak character as well as a hint of bourbon. The finish gives more white grape with a tart finish
M- medium-heavy body with moderate carbonation leads to a foamy mouthfeel and a slightly warming finish
O- bold, intense and delicious. Crosses the line between beer and wine
