The second part of a collaboration series with our good friends and neighbors from Green Cheek Beer co.

Birdie Birdie was aged in French Oak puncheons, fermented with Trois yeast, and then lagered for six weeks prior to dry hopping. The result was worth the wait. An easy drinking, mixed culture Saison-Style Pilsner - slightly hopped, a tad salty, with a refreshing citrus edge.

You know, when I had this beer, I wasn't thinking I was drinking an imperial pilsner. Tastes quite different to me. I guess the label describes it as a saison style pilsner. Now shits getting weird out there. Anyways, obligatory "I drank this on a golf course" reference.

Pours golden, looks similar to 'beer' or a pilsner, cool whatever, but yeah, its got that imperialized impression of a normal pilsner color wise, deeper, darker. 1/3" white head. The aroma, now we're delving into complexity. Has a woody, tart, salinity kind of package going.

Taste, shit, they could have called this a saison, gose, apple or wild ale and it would probably have been a closer designation than an imperial pilsner, in terms of attributes you can actually sense. This beer is like a mashup of those things. The woodiness has an edge to it coming close to cedar. Citrus and apple notes. Remembering a few of those apple beers from Bruery and New Glarus about now. This is different and pretty good. Would totally get another for another day on the course.

A: Poured into a duvel tulip to a clear straw yellow which is topped by a dense and slightly fluffy finger of white head which fades slowly to a collar around the edge of the glass with minimal lacing.
S: Smells of some dry hopped notes with a hint of citrus, a touch of sharpness from the salt, hints of oak and a little cracker like malt
T: Taste is a little sharp and just a touch tart with some notes of citrus, orchard fruits, some nice hop notes, a little cracker like malt, touch of oak, and some more fruity notes with just a touch of barnyard. On the swallow there's a little more tartness and sharpness before another round of citrus and orchard fruits comes in to round things out with a little more oak and pale malt.
M: This beer is fairly light and refreshing on the palate. Carbonation is effervescent and slightly prickly while the beer has a drying finish.
O: Overall this is a really interesting beer. Really nice flavors and a decent amount of complexity while still being somewhat approachable. I'm not entirely sure what a saison style pilsner is but I can dig it. I wouldn't mind seeing this one come back as a summer seasonal.

16oz can pour into a teku glass.

Light Yellow, a bit cloudy, with a small white head which immediately dissipates .

The nose has light funk, apple and minerals.

The nose follows through to the taste, with addition of a nice white wine favor with mild tartness.

The finish is dry and salty.

The feel watery and a touch of syrupy to coat the tongue.

This one hits all the right notes for me, for a beer who's stated intention is to be a Saison Pilsner. The mineral flavor and nose, with the dry finish is very pilsner like, while funk and tartness is saison like.
