In this collaboration with our friends at Side Project, we took inspiration from Pét Nat (Pétillant Naturel) and used old-world techniques to create a unique beer that's a bit rustic, unrefined, and thoroughly delicious.

750 mL clear bottle. Clear deep golden. Smells of deep earthy grape, light stone fruit, mild acidity. Tastes of green apple acidity, long earthy yeast notes, lots of oak, and grape flavor all over. Dry, unsweet, tart, earthy. Complex for sure. I could sip it.

750ml bottle poured into a teku
Pours amber in color with a ruby hue, one finger foamy white head reduces to a ring. Smells of sharp oak, chardonnay, lemon peel, cracked pepper and a hint of bready malt. Tastes of sharp oak that follows the nose, along with vinous chardonnay notes, the finish gives lemon peel, ripe melon, tangerine and a hint of sweet malt. Medium body with low carbonation, dry and tart finish

Broke this out for the uber rare Derby Day that first Saturday in September 2020.
Pours the same color you see in the clear glass bottle. Mostly a cloudy yellow and orange wine like appearance. Makes a 1/3" feint white head. Didn't expect it have the look of orange wine but make a beer centric head formation. The aroma was grape, sour, orange marmalade. Definitely a citrus push I don't think I'm just imagining because of the color. French oak.
Taste has a lot going on. Almost a Sabro hop like warmth, but then I realize this is a high abv beer. Plenty of citrus and grape notes to it. French oak dryness. Interesting sourness that doesn't push the generic lemon envelope. Remarkably light mouth feel to it, also plenty easy to crush despite that high abv. Didn't think the appearance had a high carbonation look to it, but you get a nice spritzy mouth feel on this one.
Unheralded, but I really enjoyed this one. Can't wait to crack open the other bottle.

A: Poured into a Duvel tulip to a bright and clear golden orange topped by a finger of dense and slightly rocky white head which fades slowly to a collar around the edge of the glass with minimal lacing. From appearances this one should have somewhat lively carbonation
S: Smells of light orchard fruits and some hints of citric sourness, doughy and bready malt, and just a little bit of faint spice like white pepper
T: Taste is slight melon and light sourness with a nice mineralic note, with a little citrus and hints of oak. Slight spice and some hints of orchard fruits. On the swallow there's some doughy malt and oak along with some more melon, chardonnay grapes, slight sourness, and slight lingering spice.
M: This beer has a body which is slightly syrupy but resides on the lighter side of medium. Carbonation is effervescent and lively without being prickly while the beer has a drying finish due to the acidity.
O: Overall this one is really nice. Great flavors that work well together, great complexity, and surprisingly easy to drink. This one is a winner and well worth a try.
