We’re bringing back a fan-favorite. Imperial Cabinet is a wild ale brewed in collaboration with our friends at Jester King. Created in honor of the Imperial Cabinet, an 1880’s New Orleans saloon and reminiscent of a nearly forgotten early 20th century cocktail, the Ramos gin fizz. The third version was brewed with traditional gin botanicals and this time, laid to rest in gin barrels with citrus after spending a year in wine barrels. The result is laden with herbal and floral notes, bright lemon and lime zest, vanilla, warm oak, and comforting spices.

A: Poured into a tulip glass to a deep orange beer which is topped by a dense and rocky slightly off white head which fades slowly to a collar around the edge of the glass with some lacing
S: Smells of tart citrus, vanilla, a little oak, and some hints of botanicals
T: Taste is quite tart up front with some citrus notes before some smooth vanilla, oak and gin come in to balance things out. The botanicals come in strong in the mid to back end providing some bitterness to balance the sweet vanilla and sour notes. On the finish there's a nice lemon lime cirus zest note mingling with some tartness along with a little drying oak.
M: This beer has a body which is on the lighter side of medium. Carbonation is effervescent and adequate for the style while the beer has a drying finish due to the acidity.
O: Overall this is pretty nice. The base beer is also enjoyable and this definitely dials things up another notch. It's also held up quite well despite about five years in the bottle.

Pours a hazy orange brown, with a one inch foamy head with some foamy lacing. Smells herbal and a bit sour. Aromas of lime, lemon, spices, white wine, malt, some licorice, light gin. Flavors of lime, malt, spices, juniper, white wine, licorice, some gin, some lemon. Tastes herbal, acidic and tart. Mostly smooth, a solid medium body, well carbonated.
The citrus shows well, and the spices and such are great, especially the licorice root. The barrels are light, but add character. Fairly acidic, but otherwise interesting and really good.

S- bright herbaceous nose; juniper, coriander, lemon & orange peels, cardamon, black licorice and cinnamon. Lively white wine undertones, with hints of vanilla and soft oak
T- bright citrus peel of lemon and orange are quickly followed by a citric tartness, as well as herbaceous gin notes, with juniper and coriander leading the way. Mid-palate gives some vinous white white notes, as well as hints of vanilla. The finish gives more herbal gin notes, with more fresh citrus zest and white wine popping out. Lingers of gin, citrus and soft oak
M- medium body with moderate carbonation leads to a foamy mouthfeel that continues into a tart, foamy finish
O- bright, lively, citrusy and fresh. The abv is hidden well and there is just enough tartness, a refreshing sour that has been accompanied well by the gin barrel
