Collaboration with Firestone Walker Brewing
We present our Terroir Project, using Cabernet Sauvignon sourced high in the Malibu mountains from the Montagneux Vineyard. Our attempt at carbonic maceration and fermentation is a co-fermentation with a lambic-styled wort and fermented 100% natively and natural. Aged in French oak puncheons until final maturity.

This beer might be a little compromised. The cork was slightly elevated in the bottle and it didn't seem to seal too tight as it spun on the corkscrew.
A: Poured into a bruery tulip to a reddish purple beer which has a small amount of head due to just a touch of carbonation.
S: Smells of some slight funk, dark cherries, currants, cassis and oak.
T: Taste is pleasant tartness and some nice funk followed by tart cherries, more deep red fruits and oak. On the finish there's a pleasant amount of funky tartness and more of those great cherry and red fruit notes with some lingering oak.
M: This beer has a body which is on the heavier side of medium. No real carbonation but it is ever so slightly prickly on the palate with a drying finish.
O: Overall enjoyable. I could see how this might be a little more interesting if it was a little more lively, but I don't find a flatter version to be less interesting.

O: Overall enjoyable. I could see how this might be a little more interesting if it was a little more lively, but I don't find a flatter version to be less interesting.

I think we crushed this during the Royal Rumble 2022. Somewhere around then. Clear bottle.
Pours a purple wine like color. Doesn't really make a head. Dude that label is supercool. The fingerprint mountain range. Dope. Why can't you trust me baby? Great song. The aroma is grape and light tartness. I dunno, lambic style wort didn't bring lambic style smells. Still smelled nice though.
The taste was also well done. Not sure what carbonic fermentation sciency stuff is, but whatever the attempt, the result is nice. Has that red wine meets wild ale meets sparkling wine experience throughout. Was shocked to see that the ABV was so high. Didn't perceive it that way, very nice mouth feel of dry oak, red grape skin and punchable acidity.
This was quite the enjoyable beer wine hybrid, although I think it leaned more to the wine side than the beer side, still very good.

Very stimulating beer/wine hybrid. Ample acidic notes over a vinous character with great sour punctuation. Crisp carbonation adding a nice freshness to the overall flow. Unique and memorable.
