Spontaneously-fermented sour blonde ale aged in oak barrels

When it comes to crafting extraordinarily wild ales, the onus is on us. This three-year blend is an homage to tradition and a testament to our Bruers’ dedication to the craft. Brewed using traditional Belgian methods of turbid mashing, spontaneous fermentation, and a Terreux twist— inoculation via the wild winds of industrial-rustic Anaheim, imparting a one-of-a-kind complexity. We hand-selected our favorite barrels, which were then gracefully blended to taste. Funky, complex, tart, and drinkable.

Golden color. Fizzy, white head. Funky aroma with fruity notes. Sour, yeasty taste with notes of wood. Sharp and complex. Close to some Belgian variants.

2020 vintage

A: Poured into a tulip to a bright golden yellow beer with a finger of dense and slightly rocky white head which fades slowly to a collar around the edge of the glass with minimal lacing
S: Smells of bready malt, light funk, green grapes, and a little tartness
T: Taste is building tartness up front along with a little oak, green grapes and hints of band aids, On the finish there's more tartness, some pale malts, hints of funk, and a touch of oak.
M: This beer has a body which is on the lighter side of things but it is not watery. Carbonation is effervescent and adequate for the style while the beer has a drying finish due to the acidity.
O: Overall this is another pretty solid offering from the Bruery. Good flavors and complexity along with good drinkability. the acid on this one was still balanced with some nice sweetness.

From a bottle. Pours a crystal clear light gold with pronounced effervescence and a few fingers of rocky white foam. The nose is tart, vinegary, and fruity. The flavor is very tart and sour with some nice fruitiness. The finish is vinegary and the body is medium-light.

As the scorching heat persists, I turn to a unique wild ale to quench my thirst. Served in a tulip glass at 44 degrees, the pour creates a frothy, airy, one-fingered white head with poor retention, leaving no lacing on the glass. The beer, charted at SRM 4, boasts a light amber hue with golden straw yellow undertones, and a foggy clarity with a few yeast floaties. This unique appearance, typical of a wild ale, piques my curiosity, despite having seen longer-lasting head and lacing at times.
Nosing the glass, I smell a substantial barnyard, which is a term used to describe a funky, earthy, and slightly animalic aroma often found in wild ales. I also detect earthiness, oak, honey, and acidic acid. The initial aromas are funky and sour but kept in check with the oak barrels. I am smelling the glass to confirm the malt aromas of lightly toasted malt, doughy, and light malty sweetness. The sensory experience of this beer is engaging, with each aroma revealing a new layer of its complexity.
The first sip shows the funky sourness with a bit of bite. The acidic acid has a lemon and vinegar vibe without the zest of vinegar. Sipping the glass again, I notice the funky barnyard with earthiness and sea salt notes. The malt is bready pushing doughy with light toasted notes. I also taste floral blossoms, honey, oak, and a skosh of herbal.
The mouthfeel is tart and finishes dry. The body is light and has high carbonation.
Onus on Us is a beer that truly delights, showcasing an incredible balance that is a testament to brewing artistry. Each sip reveals layers upon layers of sophistication, a result of the deft hand The Bruery used in creating this beer. The wild ale's complexity is on par with Jester Kings Spons, a true mark of its quality. I savored every sip of this beer and look forward to the day when I can enjoy another from my cellar.

Onus on Us pours a golden color, with no head. The aroma is sweet, with lots of green apples. The flavor has a slight tartness, and lots of green apple flavors, very refreshing. The feel is a little flat. Overall, it's a nice easy wild ale, with some apple flavors, and on the sweeter side.

Pours a crystal clear gold with a one finger white head that quickly dissipates. Nose is full of acidic funk of blackberries, pulm, and strawberries. Taste opens opens with a blast of acidity that folds into tart black berries and strawberry that transitions to plum and some raisin sweetness that is balanced by a smooth oak. Body is luxurious, medium to full with medium carbonation that has an almost nitro smoothness. Ends with a lingering pucker that’s deep in the back. Overall a wonderfully blended spontaneous fermented beer. So balanced in true Bruery fashion. Should probably grab some extra bottles.

750 ml corked bottle, Vintage 2022, 6.3% ABV. Cork wasn't in great shape but still seemed to seal the beer good enough as it let out a loud pop after it was removed. Served in a Bruery tulip, the beer pours a somewhat hazy gold color with about an inch and a half off-white head that stuck around a while. Not much lacing though. Aroma is nice and tart, the brew smells like funk, oak, apricot, lemony citrus and some bready malt. Taste is pretty much the same as the aroma, but there's also some white grape and apple vinegary flavors noticeable too. Mouthfeel/body is medium, it's smooth and a bit slick with a good amount of carbonation. I thought this was a good overall sour ale, worth trying if you come across some!

Cloudy, light orange appearance. Soda-like effervescence quickly dissipates, leaving no trace of a head. Nose is wafts of lactic acid, oak, and subtle notes of strawberries, cherries. Quite puckering on the palate, flavors are layered with notes of lemon peel, unripe berries, and lots of drying oak, Quick, dry finish.

Super tasty American wild ale. Working through this bottle faster than I should…

Pours a translucent golden yellow, effervescent 2" eggshell head that settles quick to a thin cap, no lacing. Nose is funky and slightly sweet - dried apricots and similar stone fruit, oak, musky basement, even a bit of sap and resin. Taste is pleasantly tart at the start, a slight rush of sweetness, a strong hit of oaky barrel and yeasty mustiness. Deep on the finish there's a fatty note that does linger - didn't love that, but fits with a white wine profile. Mouthfeel is light with good crisp carbonation, which makes this super drinkable. Overall, a nice, crisp, complex brew.
