We’re bakin’ up a new sour ale— literally! We developed this apricot crisp-inspired sour ale with our friends at Firestone Walker, complete with our own housemade granola made with cranberries, almonds, and cinnamon, created at their Barrelworks production facility. We added apricots, apples, and vanilla for a bright and fruit-forward ale. Enjoy alongside your own homemade granola.

I am enjoying a glass of Aprilcot Krisp on a chilly Idaho night. I served the beer in a tulip glass at 44 degrees. It has a light pink, frothy head that dissipated slowly and left some lacing on the glass. The beer was cloudy with brown and pinkish-amber hues, measuring around 20 on the color chart.
The aroma had toasted malts, breadiness, light floral scents, a little barnyard, apricots, nuttiness, and cinnamon. There were also hints of cranberries and vanilla, which gave off a tart smell like a Thanksgiving compote. The wild ale aromas were subdued, yet acidic acid was noticeable.
The beer surprised me with its depth and complexity of flavors. The apricots and cranberries paired well together, and the wild ale was tarty, fresh, and clean without being overly mouth-puckering. The malts gave the beer some sweetness, breadiness, and toasted qualities, with undertones of cinnamon and vanilla finishing the flavors.
The mouthfeel was tart and crisp, with a medium-low body and medium-plus carbonation.
I was not expecting much from the beer as it was two years old. However, I was pleasantly surprised by the well-balanced flavors and how the malt backbone kept the tartness in check, allowing me to savor the flavors. I love how The Bruery craft oddball beer and do a damn good job.

Dull, ruby color with soda-like effervescence. Nose is of unripe green apples, lemon and pit fruit.
Follows on the palate, but with a good wallop of the added cinnamon and vanilla, not parsed in the aromas. Layered and complex - the sweet fruity aspects are dried out by an oaky backbone and plenty of lactic acid.
A complex and nuanced but palatable sour brew. Put this one down quickly.

750 ml bottle, 2022 vintage, couldn't find the bottled on date for this one. Served in a chalice, the beer pours an amber/orange color with about an inch or so off-white head that stuck around a while. Decent amount of lacing. I like the aroma, the brew smells like apricots, vanilla, cinnamon, bready/grainy malt and apples. Taste is similar to the aroma, but there's also some nutty granola, cranberry, lemon and earthy flavors noticeable too. Mouthfeel/body is medium, it's a bit coating with a moderate amount of carbonation. Easy enough to drink. I thought this was a good overall sour ale, certainly worth a try if you get the chance!
