Salud! Inspired by the bright flavors of the Paloma and the bar in Mexico that invented it, La Capilla is bursting with citrus, aromatics, and the perfect sour twist. After aging our sour blonde ale in choice tequila barrels, we added grapefruit and lime to mimic the flavors of the drink. Rim with salt and garnish with a lime wedge, or enjoy it as is.

I am drinking La Capilla today using a tulip glass. Served it at 42 degrees. The pour created a creamy, two-fingered, off-white head with excellent retention. The color is a medium amber with rusty red hues, charting around SRM 14. The beer is cloudy with a few carbonation bubbles. The appearance is above average for this style.
The initial aromas are tequila, grapefruit, and lime. Nosing the glass again, I detect lightly toasted malts, bready, oak, agave, a touch of char, and a hint of funkiness. The beer smells like a Paloma with barrel aging.
It's not what I expected when I first sipped it. The tequila flavors were going to be stronger. However, the sour blonde ale with the bready fruit, lightly floral, and toasted malt with a bit of funkiness was a pleasant surprise. Grapefruit, lemon peel, and lime give the beer its Paloma-ish flavors. The barrel aging gave a near-perfect finish, a light tequila with oak and a slight char.
The mouthfeel is tart and astringent, finishing crisp. The body is medium, and the carbonation is medium-high.
This beer would make a lovely sipper on a warm, breezy summer night. Alas, it is cold, and I am cooped up; this will have to do for now. I love this sour ale-inspired beer, its beautiful flavors, and its snappy finish.

750 ml bottle, 2022 vintage. Served in a Teku, the beer pours a somewhat hazy orange/amber color with about an inch off-white head that stuck around a little while. Decent amount of lacing. Aroma is nice, the brew smells like tequila, lemon peel, grapefruit, lime, and a bit of bready malt. Taste is pretty much just like the aroma, but with the addition of some oak and earthy flavors. Good amount of tartness! Mouthfeel/body is medium, it's a bit coating with a moderate amount of carbonation. I thought this was a good overall brew, definitely worth trying if you get the chance!
