Pat O’Brien’s bar in New Orleans is home to more than just the iconic flaming fountain – a towering display of fire and water – it’s also the origin of the hurricane cocktail, the tropical delight which inspired this barrel-aged imperial sour ale. We added passion fruit, pomegranates, orange zest, dragon fruit, and limes for a bright, citrusy, tart treat.

Initial Impression:
Flaming Fountain is another cocktail-inspired beer from The Bruery that didn’t immediately sound appealing on paper. Based on a New Orleans cocktail, and while I wasn’t sure what to expect, these cocktail-inspired releases have been solid so far.
Appearance:
Served at 54°F in a stemless tulip. Pours a rusty brown with mahogany hues (SRM ~26), semi-opaque. A frothy, creamy tan head forms about a finger thick with average retention—impressive considering the age and ABV. Rich and inviting in the glass.
Aroma:
Barrel-forward with layered fruit and wild character. Oak, bourbon, and light char lead, supported by a resinous edge. The fermentation profile brings light funk—horse blanket, a touch of salinity, and a coastal “salty air” impression.
Citrus (lime, orange) and tropical notes come through, though passion fruit and dragon fruit are more subdued—present but overshadowed by the wild ale character. A hint of pear adds softness. Light oxidation contributes a subtle sherry note, while lightly toasted malt provides a touch of sweetness and breadiness.
Flavor:
Expressive and well-integrated. Barrel character leads with bourbon and oak—char, light resin, and gentle warmth—followed by a structured but restrained malt backbone (light toast, cracker, soft breadiness).
Mid-palate brings a mix of citrus (orange, lime), tropical fruit, pear, and light floral esters, layered with subtle funk (horse blanket). Age shows through with mild oxidative notes—sherry and dark fruit—adding depth without dominating. The fruit reads more integrated than bright, working within the wild and barrel profile rather than standing out on its own.
Mouthfeel:
Medium-low body with medium-high carbonation. Tannic and lightly coating, with a noticeable but balanced tartness. Finishes dry with a gentle warmth.
Overall Impression:
Another cocktail-inspired beer that turned out to be a pleasant surprise. A lot is going on—fruit, funk, barrel, and age—but it comes together cohesively. The three years of age show in the form of sherry and leather notes, adding depth without dulling the beer too much.
It drinks like a thoughtful sipper—something to unwind with rather than analyze too hard in the moment. Not everything pops individually, but the blend works, and that’s what makes it enjoyable.

Pours an opaque burnt rusty orange, big 3" head with brief retention but some spotty lacing. Nose is passion fruit, sweet orange juice, bad maraschino cherries, graham crackers, light oak and vanilla. Reminiscent of a Wisconsin Old Fashioned. Taste initially lacks the kind of tropical, fruity notes from the nose, but instead, some distinct bitter wormwood flavors. Very little lime, pomegranate, or passion fruit. Maybe some burned citrus feel (not in a good way), burned cinnamon, but certainly no brightness. After about 45 minutes, the tropical notes do start to appear, which makes this far more palatable. Tart passionfruit and a little bit of citrus. Feel is somewhat oily and slick with light carbonation at first, before it clears up and settles. This initially was quite a mess, but after sitting out for about an hour, the cleaner and fruitier flavors come forward.

Clear burnt orange with two finger white head. Nose is a smattering of vanilla and fruit punch. Taste follows the nose with some oak vanilla, followed by a smattering but clear hits of cherry, orange, lime, and cranberry with a tart background. Body is light to medium with similar carbonation. Ends dry with a lingering lime juice. Overall it’s a fruit punch, and yeah it’s reminiscent of Pat O’s hurricane. I just can’t say the flavors work well as a beer for me, but in true Bruery fashion it’s well crafted without technical flaws.
