Oak barrel-aged sour ale with ube flavor, vanilla, and graham cracker
Inspired by the much-loved Terreux Bae and the earthy-sweet flavors of ube pie, we added flavors of ube and Graham cracker along with vanilla to this sour ale, resulting in a slightly savory, slightly tart treat worth savoring.

I have passed over Will Ube Mine several times, not sure how the ube will play out in this beer. I am using a tulip glass and serving the drink at a temperature of 44 degrees. The pour created a frothy, airy, two-fingered light purple head with above-average retention. The slow dissipation left bits of lacing on the glass. The color is a dark, semi-opaque purple. The appearance is average, and the retention was a nice addition.
Nosing the beer, I detect earthy notes, such as those of potatoes and vanilla, alongside the sourness of the beer. Nosing the glass again, I detect acidic acid, light grass, a faint hint of floral esters, and lightly toasted malts. The barrel aging introduces notes of oak, light char, and a hint of resin.
Sipping the glass, I notice how the ube, vanilla, and graham crackers have this interplay that makes for an odd combination. Additional flavors are light earthiness, floral esters, oak, light char, acidic acid, and lightly toasted malts.
The mouthfeel is tart, finishing light and refreshing. The body is light with medium-plus carbonation.
Final Thought: Will Ube Mine is one of those rare beers that has an odd combination that somehow works together. The barrel aging tames the sourness to a point, and I was not sure it was a sour beer. Overall, this is not for me; great idea, but I'm not a fan of the unusual adjuncts.
