This beer is an homage to the sour and wild ales of Belgium that traditionally consisted of blended 1,2,and 3 year old beers to achieve a complex, acidic, refreshing masterpiece. It is an American interpretation of that beer style and is a blend of mixed culture beers using similar ingredients.

just amazing stuff right here, 2021 vintage i believe, i am generally dubious when american brewers call things lambic, but this certainly passes. blonde with just a lightly frosted over look to it, not messy at all, great carbonation and very delicate looking under nearly an inch of peaking and popping white bubbly head. it smells old and well blended, mature and woody, oak all through it, an almost neutral wine element but some mouthwatering tannins for sure, unique old world brett and even saison character, high funk, moderate acid and clean there, wheaty but some pils malt character too it seems, minerals abound, wet animal, musty basement, light green apple, lemon, and old hops, really proper and appealing, wow. the flavor is killer, the yeast is awesome, very old world, nice bretty and medicinal funk to this, citric acidity, a hint of orange peel and sauternes, green grape, lemon candy, and that slightly cheesy aged hop thing, herbal but not bitter, a soft tea note, hay and straw, damp soil in spring, nutty wheat character, a rawness but also a toasted and longer boiled seeming aspect, really super complex and compatible and drinkable. i like the restrained acidity, the higher carbonation, and the cleanness this ends with. delicious beer, just as compelling as the two fruited versions i was also lucky enough to have, special beer that i will keep track of moving forward, hope to score some more of this, and i am excited to see how it ages! dont sleep on this, or on imbib, they are absolutely killing it!

Pours a rich golden colour, without much head which quickly becomes even less than that.
Nose is a beautiful bouquet of tart yeasty characteristics. Green apple and white grapes and some meyer lemon and just kind of... wild character. I can't really nail it down except to say that it smells really good. Vibrant wild character.
Flavour is a good blend of those same characteristics with a good little lead in pucker on the back third, but one that is tempered before it becomes just full on sour/acid.
Smoothe and rich and flavourful with a nice little blush of sharpness to the finish. Bitter/tart aftertaste lingers.
I picked this up when we drove through Reno briefly ont he way out of Yosemite, at the recommendation of the gal working the bottle shop. It's been sitting waiting for a good excuse to crack into it (it was on the pricier side, especially for a 500ml bottle), and today sure seemed to fit the bill as we got to see a heartbeat for the first time
