absolutely epic beer, especially from a brewery i basically knew nothing about before visiting over the weekend, this is lights out, as unique and ambitious and well refined as what just about anyone is doing in this style space, and maybe my favorite overall beer we had here, which is really saying something, since so many of them were incredible. this is a wild brew, fermented with green pears, and blended back with a young lambic type, definitely one of the most interesting fermentation profiles of any of their beers, some yeast from the pears playing with their house culture and the lambic funk seems evident, and there is nice winey oak character to this from the barrel treatment. blonde and pale and unassuming looking, with a short white head from the bottle and good clarity until the bottom third, sparkling carbonation. the nose is mature brett, newish oak, white wine, tangy almost ripe pear skin, light lemon and a moderate bacterial tang, green melon, light lime, hearty wheat at the core of it, and a definite lambic almost medicinal wild side, way cool, and somehow delicate for how dynamic it is. funk all through this, but its tied intimately to the pear character, which bounces between soft white pears from the can in their own juice and the leathery skins, to me its not so much a fruit beer as it is about the yeast, and the fruit is more of a vector and an accent flavor, so brilliantly well proportioned, and its wonderful with the rustic grain base, the oaken maturity, and the prickly carbonation, so good! a light almost vitamin c type bitterness on the swallow with the acid, clean citrus, musty brett, died grass, and faint key lime. the lambic part of the blend is a neat way to add complexity to this, and this is just so thoughtful and professional. i love the name of this series, and i am excited to explore some of the other beers in it. this is not to be missed!
