We're reveling in the beauty of simplicity on this exclusive release. In the past, we explained a unique step in the Keystone barrel aging process that tells of how these beers are rested in vanilla barrels for added decadence before further processing; creating a process similar to that of a Mother Jar. An urge to rest a fresh beer 100% in these barrels has always been at the top of our experimentation list, and wow are the results spectacular.
Eleven months ago this barrel was filled with the pre-adjuncted base of our collaboration with JL Patisserie, Chocolate Turtle. A heavy, pastry-inspired beer recipe built from the ground up. After its time aging, our team unanimously decided it was worthy of its own undivided release. And so, was the beginning of a vanilla forward series as we further explore these vanilla variants and come across aged beers worthy as such. This specific barrel was a Rarotonga Tahitian vanilla variant, bringing some deep black cherry notes amongst its obvious forward vanilla. A lush mouthfeel complementing this beer's simple flavors reminiscent of a hot fudge sundae. Simplicity is key here, allowing this rare vanilla to show off everything it's got.
