We brewed Paradise Pilsner with massive amounts of German Pilsner malt and more than two pounds per barrel of U.S.Vanguard hops, an American version of the noble German Hallertau Mittelfruh. It was fermented with lager yeast from a Bavarian monastery brewery, then dry-hopped with another pound per barrel of Vanguards. To maximize flavor, we chose not to filter the beer, keeping it in the German kellerbier (cellar beer) style.
The result is pale and smooth, slightly cloudy with yeast. The flavor is clean, complex and malty, balanced with plenty of hop bitterness and fine hop aroma, with a pleasant warming sensation caused by the higher alcohol content.

Pours a golden hazy color. Smell is bright lager like malt. Taste is rich maltiness, lightly hoppy and lager like. Medium bodied and like an amped up pilsner, as to be expected. Not over the top. Pretty good.

Poured a hazed straw color with 4+ fingers of fluffed up white head. Great lacing & good head retention
S: Bready with some honey malt scents
T: Huge breadyness, lemony hops, & slight white grape flavor up front. Crackers & grainyness follows as this warms. Finishes with faint grapefruit hops, boozey warmth, cakeyness, lemons & honey malt
MF: Chewy with low carbonation, with a little slickness
Drank too easy, would've never guess the ABV being this high. Drinks like a beefed up pils versus an imperial, really enjoyed this!

Poured into a pils glass:
Pours straw yellow with a bubbly white head that descends to a thin patch. Steady streams of carbonated bubbles rise to the top.
The smell is fruity - appleish - and grainy.
The taste is grainy/fruity. Malty with balancing fruitiness. Obviously these are not Saaz hops - I would say Hallertau.
The body is light to medium. Something of a funky aftertaste lingers for a bit. Alcohol noticeable, but controlled.
Well, for the abv level, it does disappear pretty quickly. Decent, but nothing particularly special, IMO.

Visited my big brother in Idaho Falls and picked up a bottle of this at the GTBC in Victor in late August for $10.99.
This is a yellow colored beer that poured a nice white head. The color is cloudy from the unfiltered yeast. Nose is very malty and sweet. Taste is outstanding, pretty much the same as the nose with a nice hop finish to balance things out. Mouthfeel is extremely smooth on the palate. Overall drinkability is near perfect, as the abv is well hidden. This is one fine beer that i would recommend.

Purchased for approx. $11 at the Co Op in Boise, ID.
This is special stuff. Part of their Cellar Reserve series, it's truly bottle conditioned and uses authentic German Pils malt along w/ Vanguard hops (which apparently is an equal to German Hallertau Milletfruh, a noble hop variety). According to the bottle, the yeast they use is a lager yeast from a Bavarian monastic brewery, and then it's dry hopped with more Vanguard. It comes in a 33 oz. bottle with reusable top and is then topped off with wax.
This beer grows much tastier when it warms up a bit so let it sit for about 5 minutes before starting. And, as I learned that night, it's not good to try to finish the bottle on your own. It'll likely finish you instead.
The head is produced upon pouring this into a tall Rogue Morimoto pilsner glass was 3-4 fingers and long lasting. Color is cloudy dull gold.
Aroma is authentically pilsner and there's a ton of floral and herbal character in the nose. Head is very fragrant. Tons of yeast.
Flavor is equal parts malt and hops, and one of, if not the, best pilsners I've ever enjoyed. Hard to pinpoint a lot of individual flavor components beyond the basic beer flavors but the yeast is very apparent and adds a great dimension, and it's just overall a tasty, tasty beer. I did detect quite a bit of grass in the flavor, with some earthy character and a little light fruit i.e. green grape.
It's got a great bready aftertaste and has tremendous drinkability especially for this ABV level.
I'll be buying this one again.
