Do you love sours? Mixed fermentations? Wine barrel aging? Session beers? Then boy do we have the beer for you! We brewed this blonde sour the old fashioned way: by transferring a finished beer to a Chardonnay wine barrel and patiently aging it for 7 months on a mixed culture of Lactobacillus (for souring), Brettanomyces (a "wild" yeast), saison yeast, and Belgian trappist yeast. Look for Chardonnay and Belgian yeast aromas, an approachable sour kick, and a bready but clean finish. This sour is excellently balanced, complex, and refreshing.
