Collaboration with Birrificio Italiano.
Along with Agostino from Birrificio Italiano, we devised a recipe that marries two distinct styles: Italian Pilsner and Cask Pale Ale. A true collaboration that has resulted in a clean, crisp, dry and refreshing Pale Ale that has a noticeable herbal hop character from the UK-grown Hersbrucker hops.
We achieved this by taking our base Helles recipe, inclusive of step mashes and a little mash out decoction, swapped in Golden Promise malt for the paler pilsner malt we would normally use and hopped it heavily with the wonderfully herbal and woodsy Hersbrucker. We then fermented it with Verdant IPA yeast and dry hopped it at the tail end of fermentation.
