The Neumarkkter Lammsbrau Dunkles Hefeweizen is an organic hefe-weizen with a standard appearance and a slightly subdued aroma. The brewery owns its own maltings, and they produce a specially kilned malt for this beer that gives it a dark caramel flavor that's rich and exciting! They ferment it with the same weizen strain as their other weizen beers, and it's more phenolic (but mildly so), than clove-ish or banana-like. The carbonation and body are fairly typical (it's a little bit fuller and has a just slightly elevated, bottle-conditioned carbonation), and in many ways it's quite a standard weizen, with the exception that it's lightly sweet and caramelish malt is quite unique. It finishes with a lingering, toasty and richly caramelish note that teeters on heading towards roastiness; and draws you back again and again for another sip. Absolutely brilliant!
