Sensei means "one who has come before" in Japanese. We brewed this Japanese Lager to celebrate our teachers and to show gratitude for them as they walked on our path before us and paved the way. We walk in the footsteps of giants, and Sensei Jim is one such giant. Jim is our neighbor with his True Martial Arts Academy and has been teaching karate in Waltham and the surrounding community for the last 43 years. There is a common saying in Okinawa, the birthplace of karate, 行逢りば兄弟 (pronounced "ichariba choodee"), which means "from the moment we meet, we become family," and that's how we feel about Jim and the other wonderful people we have met since Mighty Squirrel moved to the Waverley Oaks community in 2018. Sensei Jim is a clean, crisp, refreshing lager with a soft hop nose. Brewed with large portions of rice to create a light color and body and exquisite dry finish.

Canned 1/31/22
This is obviously a can I forgot about in the fridge. It won't be in the best condition, but I'm still excited because it's a Japanese Rice Lager, not a style you see many of out in the wild. Let's crack this one open and find out what it's all about
Pours a cloudy bright gold with 2 fingers of soapy off white head that slowly fades to a thin cap and leaves minimal lacing
It's definitely grainy in sweet in the nose, but there's still a bit of a bite to it. I'm picking up on aromas of white rice, cereal grain, sweet honey, orange zest, fresh cut grass, and light doughy malt
It's a bit too sweet in taste, probably a function of its age but still just meh overall. On the front end of the sip I'm tasting doughy malt, raw grain, sweet honey, lemon zest, and grass. The swallow brings notes of white rice, raw grain, lemon zest, sweet honey, white pepper, and grass
A medium body pairs with moderate carbonation, resulting in a slick and creamy beer. Finishes a tad stick
This obviously would've been better fresh, but oh well. Still not bad for what it is

Pours a foamy fizzy 1 finger head with moderate retention, a little lacing, mostly clear slight chill hazed blonde straw color
Nose mild sweet malt, grainy cereal malt, fair floral slight herbal like hops
Taste has some rice wine sake like notes, earthy fruity sake, with some light cereal grain and sweet malt as well, light herbal floral hop and a bit of general fruity notes, there is an interesting flavor like oaked Chardonnay interestingly, lighter bitterness, dry crisp and mild soft finish
Mouth is lighter bod, med to lighter small bubble carb
Overall this was a really interesting unique beer, nose was a bit flat, but taste had a lot more character than I expected

Pours a really light color, one finger of large-bubbled head. Honestly, it freaks me out a bit as it looks a whole lot like a much cheaper beer.
I think I could best describe the taste as like a quaffable American pilsner (they use adjuncts, such as rice) but avoiding all of the nasty aftertastes. It's got a slightly bitter front and finishes clean. The background notes are all just like most rice lagers I've had elsewhere.
It's what it says it is: a quaffable rice lager where, in the light flavor, it manages to avoid all of the nasty tastes that can show up wit a worse beer. Good for a hot day out on the porch.
