750 ml bottle into tulip glass, bottled on 8/17/2017. Pours lightly hazy pale golden yellow color with a 2 finger fairly dense and fluffy white head with great retention, that reduces to a nice cap that lasts. Nice spotty foamy lacing clings on the glass, with a fair amount of steaming carbonation retaining the cap. Aromas of big lightly tart lemon, lime, orange, grapefruit, peach, pear, pineapple, mango, melon, red apple, berry, citrus peel/rind, peppercorn, pine, hay, straw, herbal, floral, grass, wheat, cracker, white bread, light musty funk, and yeast earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy yeast, citrus/fruity/pine hops, and moderate pale malt notes; with great strength. Taste of big lightly tart lemon, lime, orange, grapefruit, peach, pear, pineapple, mango, melon, red apple, berry, citrus peel/rind, peppercorn, pine, hay, straw, herbal, floral, grass, wheat, cracker, white bread, light musty funk, and yeast earthiness. Moderate peppery yeast spiciness, pine/citrus peel/grassy bitterness; and light yeast tang/tartness on the finish. Lingering notes of lemon, lime, orange, grapefruit, peach, pear, pineapple, mango, melon, red apple, berry, citrus peel/rind, peppercorn, pine, hay, straw, herbal, floral, grass, wheat, cracker, white bread, light musty funk, and yeast earthiness on the finish for a good bit. Great complexity, robustness, and balance of fruity/funky/spicy yeast, citrus/fruity/pine hops, and moderate pale malt flavors; with a great malt/bitter/spiciness balance; and zero astringent hop flavors after the finish. Moderate increasing dryness from bitter/spiciness and carbonation. High carbonation and medium body; with a very smooth, moderately crisp, bready/grainy/sticky, and slightly resinous/rindy balanced mouthfeel that is fantastic. Zero warming alcohol for 6.25%. Overall this is an excellent Belgian farmhouse IPA! All around great complexity, robustness, and balance of fruity/funky/spicy yeast, citrus/fruity/pine hops, and moderate pale malt flavors; very smooth, crisp, and refreshing to drink; with moderately bitter/spicy/drying finish. Absolutely spot on stuff, drinks like a saison on style profile with the high carbonation. Really great well rounded Brett/Saison yeast complexity and balanced citrus/fruity/piney American hops; with a nice solid bready malt backbone. A very enjoyable offering.
