a reasonable kolsch here, the best of the beers i had while we were in at their non brewing location eating pizza. it looks like this has evolved a little over time, or like they have multiple iterations of kolsch that they do, in my glass now is a simple blonde beer with just a little bit of german character to the grain and the yeast. i get some light fruity notes from the kolsch strain, subtle lime and lime leaf to me, almost like a mexican lager yeast can do under certain conditions, but with the crackery dry german malt in here, it seems about right for the style. the beer has a nice herbal hop profile too, almost entirely on the swallow, but remains very low bitterness, even for a kolsch. i dont think the fermentation is as clean as it should be though, there are some weird esters in here and this seems done too warm and too fast or something, tastes almost amateur in that way, and in such a simple recipe it really stands out, i kind of got that from the other beers in here too unfortunately. one with a lot of promise, a nice hop profile, and probably the lightest offering when we were in, but a beer that could use a little closer attention to detail...
