thanks to claystation for the share here, this is done in the laws four grain bourbon barrels with coffee from guatemala and maple syrup from vermont, i dont recall if those origins change from year to year or just the barrels. this is killer base beer, one of the best they make and one of the best of its kind, so expectations are always high. this does seem on the precipice of infection at a little over two years old now, not sharp or anything but with a slight tang in the finish that could be partially caused by some fading coffee, hard to keep that element alive in its full glory too long in the cellar. the maple part is epic, and i get a little light smoke with it. the deep dark malt is rich and complex and fuller bodied, the alcohol is well hidden, and there is a lot of wood here, light spiciness from this particular whiskey, and not more sweetness from the maple than is needed, most of this has aged quite gracefully, but as it warms it breaks down a bit and it doesnt quite feel like velvet the way it used to, or fresher previous vintages have rather, i suspect this will seem close to sour in another year, so if you have one now might be the time. fun to drink this with close friends around the fire, and neat to be able to drink a few versions of this over the weekend, it really is a classic already, even if its not holding on as long as we all hoped and thought it would...
