Back in the fall of 2019 we were fortunate enough to host our friends at J Wakefield Brewing for an Imperial Stout brew. Most of that batch was blended with a small amount of another base stout aged in Mezcal Reposado barrels. We packaged it as Humo y Espejos & Humo y Espejos with Fuego. Fuego went on to win a gold medal at the Great American Beer Festival in 2021 in the chili beer category. Luckily, we had 2 oak barrels of this batch reserved for further aging. After an additional 12 months in oak (32 months total), we have something truly special.

These were the last Woodford Reserve Chocolate Malted Rye barrels in our collection and we wanted to do something unique with them as a follow up to Humo y Espejos with Fuego. We settled on a blend of guajillo and two different types of chipotle peppers, some beautiful Filipino cacao nibs and a unique hybrid varietal of Mayan vanilla beans.

On tap. Tan head. Black color. Oil.

Big peppers. Mexican hot chocolate. Cocoa, vanilla, oak, bourbon, char, more spice from the peppers. Warming in both ways. Fudge. This is excellent.

Poured opaque jet black with a brown head. Aromas led by bourbon and rye with big chocolate and spicy pepper, lesser vanilla and brown sugar in the background. Taste is chocolate and pepper truffle with a big earthy booze backing, vanilla is with oak in feint finishing background. Feel is spicy and boozy, rye only accentuates this, sweetness then whallops without any lasting consequence. As strange as this is for such a heavily adjuncted stout, I think a couple months of rest would help
