Bottle conditioned version of the base Bonjou on M'Lome
"A base of genuine Belgian Pilsner malt, Belgian Candi sugar, and area-correct Belgian yeast produce lively doughy malt characteristics terminating in a complex dry snap of citrus, spice, and the subtle fruity sting of high alcohol. Clocking in at 29 IBU and 9.4%ABV."
A cloudy golden yellow body floats a generous, and persistent, billowy 2" cap of white bubbles that leaves random spotted lacing.
Citrus fruit and spice aromas hover above the fruity flavor, with a slight nod to the doughy malt, but mostly a yeast generated flavor of spicy fruits.
Carbonation is perfectly bouncy with no bite, beaten by the alcohol, I'm sure. The booze presence is just that. Present. In the drying finish, the bite sans burn, and the attenuation, however minimal, of the yeast.
Overall a really clean, tasty strong to take on your favorite cheeses, a fire, and a good book.
