Our house IPA. A juicy, double dry-hopped beer with Mosaic, Centennial, and Citra. This balanced pint has a fresh hop driven taste and a classic, slightly bitter finish.

Pours clear dark gold to amber (SRM 5-6) with a fluffy off-white froth that reaches 1.5 inches. The head settles, leaving a thick, pancake-batter lacing on a double-walled pint glass.
Caramel is quite strong, followed by resiny hops, both in lock step. Herbal mint leaves are obvious and followed by a progression of oregano and basil. The herbs quickly become prominent and certainly more obvious than IPAs tend to be. The aroma brings to mind mozzarella and pesto sauce.
The flavor is malt forward. With all the hop bombs and bitterness of recent years, this somehow feels like an IPA. Still, it is comfortable and familiar, as it is a welcome reminder of how well caramel and pine can work together. The Italian cheese and pesto follows through in the flavor and long into the mild finish. Unfortunately, I'm not detecting any of the promised fruit.
This has a medium body and soft, smooth texture of cashmere. Carbonation is also soft. Alcohol is well below expectations.
The brewer's description differs radically from my personal experience. This beer is scary easy to consume. There is no date on the can, however, I purchased four at the brewery within the week. Regardless of all else, this drinks like an earthy version of an East Coast IPA.

Picked up a 16 oz single from TW-Greenville 9-8-21 for $2.99. No canning date; consumed 11-29-21.
Beer poured orange with a major gusher that has settled into a fine head.
Nose is tropical and citrus forward with a hint of rind bitterness.
Taste is less hoppy than the nose. Moderate pale malt base is in a nice balanced harmony with orange and guava hopping resulting in more of a pale ale balance; 5/10 on my bitterness scale.
Mouthfeel is light bodied and refreshing.
Overall a nice beer. Wish it was not a gusher and will need to re-sample in the future.

Poured into a pint glass from a 16oz can. Has a moderately thick head that slowly tapers off but never completely fades. Smells much hoppier than it tastes. Not really sure what guava tastes like, but this certainly tastes fruity. Not a traditional hop bomb IPA I'm used to from New England. Really nice, somewhat toned-down IPA flavor overall. Would definitely buy again.

L: Poured from a tallboy can to a pint glass. Had a bright, golden yellow color and a hazy consistency. There was a massive, foamy / rocky, long-lasting head. Very good lacing.
S: A decent, but not spectacular, aroma of hops, citrus fruit, a floral quality, malt, and tropical fruit.
T: Tasted of small amount of malt (mostly in the finish), a hint of the floral quality (very fleeting), a good amount of tropical fruit (guava), some citrus fruit (orange), and a fair amount of hops (surprisingly powerful). A solid, but not mind-blowing flavor. It's more bitter than most IPAs today, but the fruit balances things out.
F: A well-carbonated beer with sharp finish. Medium-bodied.
O: An uneven, but nonetheless likable beer. Worth a look.

16 oz undated can recently purchased at the Wall of Beer (SC).
Deep amber colored body with a tall, frothy, durable, white head.
Aroma: grassy-floral-fruity hops with floral notes dominant.
Flavor: complex; moderately bitter for style.
Feel: medium body with lively, medium-high carbonation.
Overall: recommended IPA

1 pint can, can dating fail, but probably reasonably fresh thanks to proximity
Can says IPA brewed with guava, juicy IPA brewed with citra, centennial and mosaic hops
60 ibu
Hazy golden orange, one finger’s head, spotty lacing, full blanket of carbonation
Strong tropical and citrus aromas, as well as yeasty notes
Characteristic citra and mosaic citrus flavors, guava lying low, but lends tropicality
Some bitterness, not soft, more fruit as the glass warms, medium body
Very enjoyable citra mosaic IPA shows this brewery can do hoppy beers well.

Birds Fly South Ale Project "The Bluprint"
1 Pint can, "CAND ON 1017 18"
$3.99 @ Knightly Spirits O.B.T., Orlando, FL
Look: Very hazy golden body beneath a fluffy head of white. Average head retention and lacing.
Smell: Fruity/hoppy over a basic grainy malt base. Clean and fairly bright but more to the strength of an APA rather than an IPA.
Taste: Fruity/hoppy over a basic grainy malt base. Nicely balanced by a very firm bitterness (60 IBUS listed) that leads it to a dry conclusion. This is brewed with guava, and with knowing that you can detect it, but otherwise guava is a fairly mild fruit that will probably be overlooked or lost in the mix. Notes of berries, guava, orange, lemon, and hop resins/"dankness".
Feel: Medium bodied and crisp with fine-bubbles.
Overall: A solid American IPA that leans towards the NEIPA style with added fruitiness from guava and a pleasant blend of fruity hops.
