a neat blended wild beer, just my second from this very intriguing operation. i love the packaging, and i love what they seem to be up to. this is unique for being unfruited and without any obvious adjuncts, not the same old sour profile, and actually a very distinctive beer from a fermentation standpoint. it still seems a little amateur to me, but i like where they appear to be going. the beer pours a light rust colored orange and is relatively flat in the glass, some density to it, no visible sediment but the beer isnt fully clear. aroma of sharp citrus, grapefruit pith and a slightly sweeter tangerine element, with white wine tannins and oak, apricot undertones, and an obvious acidity, white vinegar and some developing bretty funk as well. the flavor has more grain character than anticipated, more than just pale barley and wheat to me, something in that lightly toasted almost nutty realm, which adds a needed earthy and hearty grounding to the acidity, which is running away with this just a bit. there is a faint cheesy character to it, but for me, its only there for a flash, and gives way to some cool funk pretty quickly. there is an interesting sweetness to this that kind of beefs it up in an unexpected way, like honey and dried apricots together in the middle before the sourness takes hold, i like that layer, and it comes back in flavor at the finish. a little less carbonated than i would like it to be, and not quite dialed in yet, but a neat beer for sure if you dont mind the high sourness. this seems like it will continue to develop favorably in the bottle as well...
