A crisp, full flavored, light ale that drinks clean with minimal hop and a refreshing finish. This traditional Kölsch was hopped with Perle and Saphir for a bouquet of biscuits and subtle honey that builds off the sweet apple esters. This ale is perfect for any outdoor adventure.

Picked this up at the Holly Springs County Store in South Carolina last year as I was on my way to the Sassafras Mountain. Wanted a good South Carolina beer for a day of hiking and indeed, this his the spot as it was easygoing, easy to drink, and true to form from start to finish!
This poured a hazy shade of honey as it was topped off by more than enough head that took long enough to settle down. Most of the lacing that remained was in the form of a wavy collar near the top of my pint glass with scattered spots the rest of the way down. Lots of honey sweetness, grass, and floral hops as the taste was quite sweet, slick, and juicy. Lots of fall fruit and apple emerged as this warmed up with some hints of farmhouse funk, bread, and light spice entering the fray in the back. Much more varied than a typical Kolsch, I loved the taste of this and how everything melded nicely together as I was down to the last sip before I knew it!
Light in carbonation and body, this had way more discernible malt than hops as all it was missing was a date on the can or label. Glad I picked this up as it's a shame that all of their offerings are retired. How did a brewery like this go belly up?

A very slow pour from a 16-oz. can released a finger of white soapy foam that turned rocky as it slowly shrunk to a lasting cap. Clear, light straw color shows golden yellow in front of light. Irregular blotches of lacing clung to the glass.
Bold smell of bread and cracker with faint indistinguishable hops. A hint of fruit and potential sweetness.
The taste is mild and subtle, neutral and very low on bitterness. As in the smell bread and cracker prevail with some toast and a hint of honey sweetness. Very faint white wine and herbal hops. The finish is crisp and clean and dries a bit. Bitterness rises (still low) and lingers. Alcohol is difficult to detect.
Medium light bodied with soft, lasting carbonation. Well balanced and easy to drink. No date on can.

A: Pours a crystal clear pale golden yellow in color with moderate amounts of fine active visible carbonation rising quickly from the bottom of the glass and moderate pale yellow + bright yellow colored highlights. The beer has a two finger tall sudsy foamy bright white head that reduces to a handful of small patches of thin film surrounded by a large patch of slightly mottled very thin film covering the remainder of the surface of the beer and a thin ring at the edges of the glass.
S: Light to moderate aromas of cereal grain + biscuit + bready malts with a light amount of grainy + honey-like sweetness and a hint of light fruit (apple). Light aromas of earthy + spicy + citrus/tangerine hops. Hints of lager yeast.
T: Upfront there are just shy of moderate flavors of cereal grain + biscuit + bready malts with a light amount of grainy + honey-like sweetness and a hint of light fruit (apple). That is followed by a hint of lager yeast. Finally there is a light flavor of earthy + spicy + citrus/tangerine hops which impart a fairly light amount of bitterness which fades away fairly quickly leaving a relatively clean finish.
M: Slightly heavier than light bodied with slightly heavier than moderate amounts of carbonation. Crisp with a hint of dryness and a relatively clean finish.
O: Easy to drink with well hidden alcohol and a light refreshing mouthfeel. Enjoyable and perfect for the hot summer days here in NC (even though it is not quite as hot as usual this week) - traditional flavor and aroma.
